  • Whether you're on a low-carbohydrate diet or you simply enjoy eating healthful foods, The Gourmet prescription is a valuable addition to your cookbook library. Written by a physician, Dr. Deborah Chud, it's geared towards people on one of the "modified carbohydrate" diets that are becoming increasingly popular, but it's also for anyone who wants to reduce their carbohydrate intake. Each recipe is accompanied by a nutritional analysis, with details on its calorie, protein, fat, cholesterol, and fiber content. Non-dieters would do well to get this cookbook, too, though. "Gourmet" is really the only way to describe delectable recipes like Broiled Lamb Chops with Herbed Garlic Puree and Filet Mignons with Porcini Butter. Imaginative yet accessible, side dishes like Lemon-Scented Eggplant are easy to prepare. Cooked up just before dinner, they make a great change of pace from the mashed potatoes or coleslaw so many of us fall back on in a pinch. More complex main dishes, including Pork Tenderloin with Plum Sauce are still well within the reach of today's cooks, pressed for time though we all are. Desserts are always a big challenge for dieters, particularly those on a low-carbohydrate plan. Chud meets the challenge of creating flavorful desserts wonderfully with a variety of dishes, all less than one hundred calories. The Chilled Fruit with Cold Blueberry Sauce is, simply put, phenomenal. The Roasted Pears with Gorgonzola are elegant, fairly high in protein, and only eighty-three calories per serving. Delicious but guilt-free, the dishes in this book will be on your menu often, whether you're dieting or not.
